Back We Go
Here are a few pictures of my LAST trip to Nebraska before I leave for my NEXT trip to Nebraska tonight. {I have pictures with other family, but for some reason I can't get any more to load!}
This trip is my birthday present. And lucky D, his birthday present from my parents is also a plane ticket to Nebraska. It's the only thing that was on his list. ;)
D will have been to Nebraska 3 times in 8 months now, and hopefully he will continue discovering more of its positive attributes. :)
So yes, we are headed back to my home state only 5 weeks after we left. But this time I plan to waterski. The lake level was too high last time.
I am crossing my fingers for Grandma's angel food cake and some sweet corn, too.

Almond-Crusted Salmon with Pico and Feta
Hello there!
I have a great, easy recipe for you all! Danny and I tried it last night and will definitely be making it again. The original recipe calls for homemade pico de gallo, but I took the cheaper/easier route and bought some pico-like salsa instead.
Almond-Crusted Salmon with Pico and Feta
Salmon fillets
Mixed greens
Pico de gallo-like salsa or homemade pico
Feta cheese
Red wine vinegar/olive oil
Salt and pepper
Almonds, finely chopped
First, salt and pepper your fillets. Then coat them with the finely chopped almonds. Heat a skillet to hot, with just enough olive oil to coat the bottom. Cook the fillets (about 2 minutes on each side). Remove pan from heat. (I chose to peel the skin off the bottom of the fillets after cooking.)
Toss the mixed greens in red wine vinegar and olive oil. Place fillets on top. Cover with pico de gallo-like salsa and top with feta cheese.
Easy and delicious!
